今天跟大家分享一组由TORCH咖啡(亚洲学校)
所拍的一组瑕疵豆样品。
在Q Grader课程中,
很多人的问题是搞不清楚生豆分级,
原因有以下几点:
Today we wanted to share some photos taken by
Torch Coffee Torch Coffee School Asia.
Often people have a problem with the green grading part
of the Q Grader course,
there are many reasons for this:

1 很多人在有一定经验之前分不清楚瑕疵豆。

Many people have not seen a lot of these defects before on a regular basis.

2 每颗咖啡豆都各有不同,每颗瑕疵豆仅略有不同
Every coffee bean can look different and every defect can look slightly different.
3 精品咖啡行业中的很多咖啡生豆都相当干净,
但也掺有些许虫害豆、
贝壳豆、破损/碎裂豆等。
A lot of the green coffee we get now in the specialty coffee industry
is pretty clean of defects other than
insect damage, shells, and broken/chipped.

未熟豆 IMMATURE BEANS
酸豆 FULL SOUR
贝壳豆 SHELLS
全黑豆 FULL BLACK BEAN
干处理破损

红银皮豆 RED SILVER SKIN
干荚豆 CHERRY POD
湿处理破损

注意:红银皮的豆子其实并不是瑕疵豆,通常会和酸豆搞混。
